Wild by Nature: A Guided Tasting with Blind Enthusiasm

Five beers. Ninety minutes. A taste of fermentation’s wild side.

Join Good Cheer Brewing and Edmonton’s Blind Enthusiasm on Tuesday, November 10, for a guided exploration of spontaneous and mixed fermentation—where wild microorganisms, oak barrels and time create extraordinary flavours.

Across five tasting pours, discover how these beers develop their character, from bright acidity and delicate fruit notes to earthy complexity and a dry, wine-like finish. Learn what separates spontaneous from mixed fermentation, how barrels shape a beer, and why blending is as much an art as brewing.

In spontaneous fermentation, naturally occurring yeasts and bacteria find their way into cooling wort from the surrounding environment. In mixed fermentation, brewers introduce selected communities of microorganisms. Both approaches open the door to flavours that continue to evolve over months and years.

We’ll explore the science behind the process and the craft behind the glass, with plenty of opportunity to ask questions and compare what you taste.

Whether you already love wild ales, enjoy exploring wine and cider, or are simply curious about what beer can be, pull up a chair.

Your ticket includes five beer pours and a 90-minute guided tasting with Good Cheer Brewing and Blind Enthusiasm.

Take home bottles will be available for purchase at the event.
